Ingredients: 12 Muffins

  1. 1 Medium Zucchini
  2. 2 Medium Carrots
  3. 1/2 Red bell pepper
  4. Red pepper flakes
  5. Egg Whites: Approx. 24

Preparation

  • Preheat your oven to 350 degrees
  • Chop up your vegetables into small pieces
  • In a skillet saute the vegetables until cooked and sprinkle with crushed red pepper flake
  • In a well-greased muffin tin, scoop your vegetables into each muffin cup about half way full
  • Fill the cups 3/4 of the way full by pouring in egg whites
  • Bake at 350 degrees for 20-25 minutes until the edges are brown and the tops are cooked
