Ingredients: 12 Muffins
- 1 Medium Zucchini
- 2 Medium Carrots
- 1/2 Red bell pepper
- Red pepper flakes
- Egg Whites: Approx. 24
Preparation
- Preheat your oven to 350 degrees
- Chop up your vegetables into small pieces
- In a skillet saute the vegetables until cooked and sprinkle with crushed red pepper flake
- In a well-greased muffin tin, scoop your vegetables into each muffin cup about half way full
- Fill the cups 3/4 of the way full by pouring in egg whites
- Bake at 350 degrees for 20-25 minutes until the edges are brown and the tops are cooked
